Vanilla Almond Butter + Coconut Oil Chocolate Oat Bowl

Chocolate for breakfast?

Chocolate can be healthy!(ish)

Looking for a simple, but decadent-tasting breakfast? This is something that took me less than 5 minutes to whip up, so if you're constantly busy (welcome to my med school life), this is perfect. 

And what's even better, if you bump up the chocolate in this bowl, it can turn into a lovely dessert! Actually, let's be honest - I up the chocolate even when I'm having this for breakfast...

Also a great addition: berry chia seed jam!

Vanilla Almond Butter + Coconut Oil Chocolate Oat Bowl


Ingredients

  • 2/3 C oats
  • 1 1/3 C almond or coconut milk (I used unsweetened vanilla almond milk)
  • 1/4 - 1/2 tsp vanilla
  • Dash of salt
  • Optional: 1 tsp maple syrup

Toppings:

  • 1 TB almond butter + 1 tsp coconut oil + dash of maple syrup (optional)
  • 1/2 C blueberries
  • Large drizzle of coconut oil chocolate
  • Optional: granola, unsweetened coconut flakes, chopped nuts

Instructions

  1. Combine oats and milk on stove and bring to quick boil then simmer until liquid is absorbed
  2. While oats are cooking, gently heat almond butter and coconut oil together until melted
  3. Remove oats from heat and add into vanilla, salt, & maple syrup
  4. Transfer to bowl and swirl in almond butter sauce
  5. Top with granola, blueberries, coconut flakes
  6. Pro tip! To give it some extra creaminess, add a splash of milk over the oats at the end of your prep
