Blueberry Banana Pancakes (1 Bowl!)

I absolutely adore breakfast food. And when I switched to a healthier lifestyle, I was not about to give up pancakes. Fortunately, neither do you! Because no one should have to give up pancakes. A healthy lifestyle (well, the way I live it), is not about deprivation. It's about adapting. You can have all the types of foods that you used to like--because there's a healthy version of pretty much anything. And if you're lazy (like me), you'll be glad to know that these pancakes only require a few simple ingredients and a blender. Just throw it all in, blend, and fry 'em up! Couldn't be simpler.


  • 1 banana (the riper, the sweeter)
  • 1 C oats
  • 1/4 C plant based milk
  • 1 tsp baking soda
  • 1 tsp vanilla
  • 2 TB maple syrup
  • dash of salt


  1. Simply add all ingredients to a blender, and blend until smooth.
  2. Heat a griddle with coconut oil, and fry these over medium-high heat, flipping after a few minutes. Voila!
