Blueberry Chia Pudding + Berry Smoothie
Blueberry chia pudding
- 1/4 C chia seeds
- 1 C plant milk
- small handful blueberries, fresh or frozen
- 1/2 TB maple syrup
- 4 bananas, frozen
- 2/3 C frozen berries
- splash of plant milk
- a few ice cubes
- Mix chia seeds with plant milk and allow to sit on counter to absorb.
- In a blender or food processor, combine ingredients for berry smoothie layer and blend until smooth. Pour 1/2 into two small bowls.
- When chia seed mixture is thickened, put into blender with berries and maple syrup. Blend and pour 1/2 into the 2 bowls, swirling with the berry smoothie layer. Top with fresh berries and coconut chips.
