Blueberry Chia Pudding + Berry Smoothie

Ingredients

Blueberry chia pudding

  • 1/4 C chia seeds
  • 1 C plant milk
  • small handful blueberries, fresh or frozen
  • 1/2 TB maple syrup

Berry smoothie

  • 4 bananas, frozen
  • 2/3 C frozen berries
  • splash of plant milk
  • a few ice cubes

Directions

  1. Mix chia seeds with plant milk and allow to sit on counter to absorb.
  2. In a blender or food processor, combine ingredients for berry smoothie layer and blend until smooth. Pour 1/2 into two small bowls.
  3. When chia seed mixture is thickened, put into blender with berries and maple syrup. Blend and pour 1/2 into the 2 bowls, swirling with the berry smoothie layer. Top with fresh berries and coconut chips.
