Chocolate Sweet Potato Dessert Bowl

Sneaky Veggies

Surprise! This dessert or snack has vegetables and chocolate - the best things ever!

 

When I think dessert, I usually go for banana bread + PB + chocolate, or one of my energy balls, or just plain dark chocolate. I usually don't think, let's add veggies. But it can happen -- and it can be delicious! This recipe takes just less than 10 minutes to whip up (if you use the microwave, which I'm assuming most people will). 

As you may know, I'm a student, so I don't have the time or energy to spend hours cooking every day just to get one dish. I'm not about that.This recipe, just like all my recipes, is simple, only requires a few of my favorite ingredients, and is unbelievably tasty - not to mention healthy! Best of all worlds, right?

Ingredients

Serves 1

For potato mash:

  • 1 sweet potato
  • drizzle of coconut oil (for baking)
  • 1/2 tsp cinnamon (to taste)
  • optional: 1/8 tsp nutmeg
  • dash of salt
  • 1 tsp maple syrup

Almond butter sauce:

Toppings: chia jam, granola, chopped toasted pecans, coconut

Directions

  1. Pierce sweet potato all over with a fork, drizzle with some melted coconut oil & bake at 400 degrees for 30-45 min (or microwave for 5 min if you’re in a rush).
  2. Gentle heat maple syrup, coconut oil, and almond butter in small pot until melted. Remove from heat, and add vanilla.
  3. When potato is done, peel away skin (or leave on if you prefer), & mash with a fork or masher if you have one.
  4. Sprinkle with cinnamon and salt, and add in 1 tsp maple syrup. Mix into potato mash.
  5. Drizzle with almond butter sauce.
  6. Top with granola, toasted pecans, and a dollop of melted coconut oil chocolate
