Easy Mint Dragonfruit Smoothie Bowl

I was so excited when dragonfruit was finally back in stock in my grocery store! (Thank you, Publix). Dragonfruit or pitaya is all the rage right now, but you have no idea how exciting it is to slice open one of these babies and see the vivid pink fruit inside. It is insane how vibrant and colorful this fruit is! It doesn't seem like it should be natural, but it is and it is a wonderful, nutritious fruit to add to smoothies, juices, chia puddings, or whatever you can imagine. It's got a melon-like flavor, but the color is unlike anything else.


  • 2 frozen bananas
  • 1 small dragonfruit, fleshed and frozen
  • A few mint leaves
  • Dash of water or plant based milk
  • 1 TB maple syrup or honey (if not vegan)
  • Toppings: pumpkin seeds, kiwi, coconut


  1. Blend all ingredients in a blender until smoothie. Top with sliced kiwi, pumpkin seeds, & coconut.
