Maple Chia Peach Parfait With White Mulberries
White peaches have a cooler, crisper flavor than normal peaches, and are such a refreshing treat for the summer!
- 1/4 C chia seeds
- 1 1/2 C plant based milk (coconut, almond, oat, hemp, etc)*
- 1 tsp vanilla extract
- 2 TB hemp seeds
- 2 white peaches, chopped
- 2 TB maple syrup
- 3 TB white mulberries (optional)
*The ratio of chia to liquid is variable depending on the thickness you want. It can be anywhere between 1:3-1:6 chia:liquid.
- Whisk chia seeds and milk together in a bowl and allow to sit at room temperature until absorbed (or in the refrigerator overnight). Whisk again when liquid is fully absorbed.
- Stir in vanilla, hemp seeds, chopped peaches, maple syrup, and while mulberries. Top with more peaches, syrup, and hemp seeds (optional).
