Spicy Cauliflower + Grain Buddha Bowl with Creamy Herb Dressing

The bowl to please all

It's a promise: everyone will love this bowl. It's vibrant and full of flavor!

My family doesn't exactly eat the way I do. I try out more plant based recipes on them, and most are hits and some are misses. This is one of the "hits", I promise! Since it's filled with so many rich and filling ingredients, it really feels you up, and doesn't make you miss meat, if you're used to have meat with every meal. And if you still want it, toss in some chicken or something, I won't be offended (I won't know)! It's filling, full of fiber, protein, spicy flavor, and a creamy herb tahini dressing.

Serves 4


  • Large bowl kale (about 6-9 cups), chopped
  • 1/2 C quinoa
  • 1/2 C brown rice
  • 1 1/2 C frozen corn
  • 1/2 red onion, chopped
  • 1 bag of frozen cauliflower florets 
  • 1/2 tsp garlic
  • 1 tsp paprika
  • 1/4 tsp cayenne pepper
  • opt: dash of hot sauce
  • 2 TB olive oil
  • 2 large sweet potatoes (+ 2 TB olive oil)

Herb Dressing

  • 1/2 C tahini
  • 1/2 C water
  • 2 TB olive oil
  • juice of 2 lemons
  • 3 TB each of fresh dill, parsley, chives
  • 1/2 tsp garlic
  • salt + pepper


  1. Preheat oven to 450 degrees F.
  2. Wash sweet potatoes and chop into chunks. Toss with 2 TB olive oil and salt + pepper. Baking for about 30 minutes until soft.
  3. Bring 1 C water to boil on stove with 1/2 C brown rice. Cover and allow to simmer. Do the same with the quinoa.
  4. Heat frozen corn in one pot on stove, and frozen cauliflower in another. Add a dash of water to each pan.
  5. When the veggies are done, remove both from heat.
  6. Put cauliflower into a bowl. Add garlic, paprika, cayenne pepper, olive oil, salt + pepper to the cauliflower and toss.
  7. While grains are cooking, chop fresh herbs, and whisk together all the ingredients for the dressing. Put in the refrigerator to thicken and set.
  8. When grains are done, combine them with the corn.
  9. Into each buddha bowl, add a base of kale (about 1-2 C each), grains/corn, sweet potatoes, spicy cauliflower, and drizzle with dressing.
