Sticky Caramel Brownies (Raw)
Sticky + Simple Dessert
Just 5 ingredients!
I am a dessert addict. I confess. I'm in therapy. (Ok, not really). What's so perfect about these bars is that they're easy, first off. You know I like easy recipes. I don't have time for long complicated ones with a bunch of ingredients I can't afford. I'm a med student, for crying out loud! The second thing I like about these is that they're not messy and can keep long in the refrigerator. They're great alone or crumbled on top of oatmeal, smoothies, or coconut yogurt. So delicious, chocolately, and versatile!
- Heat a pot of water to almost boiling, then remove from heat and add dates. Allow to soak while preparing the nuts.
- In a food processor, process walnuts into a meal.
- Drain dates (after allowing to soak at least 5 minutes) and add to food processor along with a tablespoon of the hot water. Add vanilla, cacao, and salt to processor, too.
- Process until smooth. Spoon onto a small cookie sheet lined with parchment paper. Spread into a large square of desired thickness and refrigerate until a few hours until set. Cut into about 10 squares and keep refrigerated.
