Summer Avocado Chopped Salad


Crisp + Light

A perfect, filling salad for summer!


  • 2 small bags of chopped lettuce of choice (romaine, iceberg, etc), or 1 big "bowlful"
  • 3-4 green onions
  • 1 packet cherry tomatoes
  • 2 small avocados
  • 2 C frozen corn
  • salt + pepper
  • optional add ins: black beans, coconut bacon, shredded carrots


  • 1/3 C olive oil
  • 3 TB apple cider vinegar
  • 1 TB maple syrup
  • 1 TB lemon juice
  • 1 small clove garlic, finely minced
  • salt + pepper


  1. Chop lettuce roughly. Slice cherry tomatoes into halves or quarters. Dice avocado into large chunks. Finely chop green onions.
  2. Heat frozen corn in a pot on the stove with a dash of water until thawed. Allow to cool.
  3. Whisk ingredients for dressing together.
  4. Add all veggies into a large serving bowl, and toss with desired amount of dressing. Add pepper to taste, and voila!
